Homemade Cream of Chicken Condensed Soup

From: Tammy's Recipes

Ingredients:
1 1/2 cups chicken broth
1/2 teaspoon poultry seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon salt (or less; taste to test)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk
3/4 cup flour 

In medium-sized saucepan, boil chicken broth, 1/2 cup of the milk, and the seasonings for a minute or two (longer if using fresh onions or garlic). In a bowl, whisk together the remaining 1 cup of milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.



Verdict:
Thumbs up!! Ever been in the middle of a recipe and realize you don't have any cream of chicken soup in your pantry? Okay, if you're a prepared cook that's never happened to you. But it happens to me all the time!! This is an easy way to whip up your own condensed cream of chicken soup. Yummy and no extra ingredients like you will find in the canned stuff!

Homemade Cream of Chicken Soup

I was cooking a recipe last night and wanted to substitute cream of chicken soup for cream of mushroom... only to find that I didn't have any in the pantry! Well, I'd been wanting to make my own for some time anyway, so here was my chance.

I took a recipe from here and a recipe from here and put them together. Here is how mine turned out:

Ingredients:
1 Tbsp flour
3 Tbsp butter
1/2 cup chicken broth
1/2 cup milk
salt (to taste)
pepper (to taste)
garlic powder (to taste)
onion powder (to taste)
parsley (just a dash)


Melt the butter in a small saucepan over medium-low heat. When melted, whisk in the flour and continue whisking until smooth and bubbly. Remove from heat and slowly whisk in the chicken broth and milk. Return to heat and bring to a gentle boil, whisking constantly, until the soup thickens. Add in spices. Makes equal to one can of soup.

Easy peasy!!
