I probably used more like 3/4 of a cup of cheese.
Amandahttp://www.blogger.com/profile/05289515864801482122noreply@blogger.com0tag:blogger.com,1999:blog-2487986690245899066.post-43090109319108453192021-09-09T11:55:00.000-04:002021-09-09T11:55:00.860-04:00Baby Hot Browns
From: Southern Living: All-time Favorites cookbook

Ingredients:

16 pumpernickel rye party bread slices

2 Tbsp butter

2 Tbsp flour

1/2 cup shredded sharp Cheddar cheese

1 1/2 cups milk

1/4 tsp salt

1/4 tsp pepper

2 pounds thinly sliced turkey

1/2 cup freshly grated Parmesan cheese

6 bacon slices, cooked and crumbled

Arrange bread slices on a lightly greased baking sheet. I broiled them in the beginning instead of baking them at 500 degrees (basically the same thing, right?) My suggestion would be to add the milk BEFORE adding the cheese. That's how I make macaroni and cheese. I followed the recipe instructions against my better judgement and the cheese was super gooey and didn't melt as smoothly as I would have liked. Trust me. Pour your milk in gradually to the butter/flour mixture, keep whisking, let it thicken, and THEN add that cheese. And we only had to cook it for about 4 minutes in the oven for it to be done. Perfection!
Amandahttp://www.blogger.com/profile/05289515864801482122noreply@blogger.com0tag:blogger.com,1999:blog-2487986690245899066.post-35321622214930924362021-02-23T11:13:00.003-05:002021-02-23T11:13:34.722-05:00Fried Apple Pies
From: Southern Living 1988 cookbook

Ingredients:

1 8-oz package dried apples or 3 cooking apples

1 cup water

1/3 cup sugar

1 Tbsp butter

1 10-oz can flaky biscuits

Vegetable oil

Combine apples and water in a saucepan; bring to boil. I can let myself have a little bit of sugar and it feels like I don't want to stop. Those habits (addictions, in a way) are hard to stop. I may want to return to Whole 30, and if I do, I want to remember the brands and foods I loved so much throughout my round. I was so grateful that I could easily find these brands at our local Kroger, Walmart, and Publix.

Aidells chicken sausage - this quickly became a breakfast staple for us! I don't normally cook with chicken thighs and I remember why... they're so fatty! Yes, they were cheap, but I had to trim a ton of fat off. I'd rather just buy breast cutlets next time for this recipe. The sauce, though, I was LOVING! I was a little surprised because I don't like coconut anything, so I was afraid the coconut oil and milk would be too much in this recipe. I couldn't pick out that flavor at all though. I really liked the tanginess of the sundried tomatoes. I think they added a lot to the recipe. All in all, very good, and I will probably make again, although I will half the recipe next time because I could see me doing this for a nice lunch for myself the next time I cook it.
Amandahttp://www.blogger.com/profile/05289515864801482122noreply@blogger.com0tag:blogger.com,1999:blog-2487986690245899066.post-73508303552420976692020-12-03T10:05:00.001-05:002020-12-03T10:05:07.887-05:00Whole 30 Chicken Salad
From: Mary's Whole Life

Ingredients:
<ul class="wprm-recipe-ingredients" style="background-color: white; I printed it out years ago and only just now tried it.

Ingredients:
1 1/2 tsp olive oil
1 cup rolled oats
2 Tbsp and 2 tsp butter
1 Tbsp honey
2 Tbsp and 2 tsp packed brown sugar
1/4 cup chopped almonds
2 Tbsp and 2 tsp dried cranberries
I added chopped up chocolate bits as well!

Heat the oil in a large skillet over medium-high heat. Add oats, then cook and stir until starting to brown and crisp, about 5-10 minutes. Remove from heat and spread out on a cookie sheet to cool.

Melt the butter in the same pan over medium heat. Stir in the honey and brown sugar; cook, stirring constantly, until bubbly. Return the oats to the pan. Cook and stir for another 5 minutes or so. Pour out onto the cookie sheet and spread to cool.

Once cool, transfer to an airtight container and stir in the almonds and dried cranberries. Any additional nuts and fruit can be stirred in at this time also.

This was so good. The thin flank steak was absolutely perfect for this recipe. I think we all agreed it tasted just like it would in a Mongolian restaurant (which we are really missing right now!) The flavor of this sauce was thick and sweet, and it also paired perfectly with the rice. It was almost as good leftover as it was the night I made it. I think this is one of my favorite meals I've ever made. A must-try!

Ohhhh my. These were SO good! They were incredibly easy to make, too. I have a ton of apples so I'm trying to find new ways to use them. I only used two apples because I wasn't sure how much we were going to like them. The outside was so much like a funnel cake, and then there was that burst of apple flavor on the inside. Verdict:
I don't really love baked apples, but I am overrun with apples right now, so I'm trying a few new recipes. This recipe was good, but not my favorite. I feel like it was missing a little something but I'm not sure what. So if you've made a recipe similar to this with extra ingredients, let me know!Amandahttp://www.blogger.com/profile/05289515864801482122noreply@blogger.com0tag:blogger.com,1999:blog-2487986690245899066.post-25587470354369980972020-05-01T13:19:00.001-04:002020-05-01T13:19:08.487-04:00Teriyaki Beef BroilFrom: Southern Living 1992 cookbook
