Mountain Dew Apple Dumplings

Ingredients:

  • 2 large green apples
  • 2 tablespoons ground cinnamon, divided
  • 2 (8 oz) cans crescent rolls
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup Mountain Dew

  1. Preheat oven to 350°F. Grease a 9x13 baking pan (or extra large cast iron skillet) set aside. 
  2. Core and slice apples into 8 even slices (16 slices total) and then peel the skin off the apples.
  3. Sprinkle cinnamon (about 1 tablespoon) on top of all of the apples. Then roll one apple slice inside of each crescent roll piece.
  4. Place in prepared pan, in two rows, leaving a little room between each dumpling. 
  5. Then in a small pot bring the butter, remaining 1 tablespoon cinnamon, granulated sugar and brown sugar to a boil. Once boiling, evenly pour over the crescent rolls.
  6. Finally pour the Mountain Dew around just the edges of the pan.
  7. Bake for 40 to 45 minutes, until bubbling and the dumplings are browned on top. 
  8. Serve hot with vanilla ice cream and pour the extra sauce form the pan on top! 




Verdict: Thumbs up! We could eat these every day probably. They're SO easy to make, and will definitely satisfy your sweet tooth!

Apple Fritter Rings

Ingredients:
1 egg
2/3 cup milk
1 tsp vegetable oil
1 cup flour
2 Tbsp sugar
1 tsp baking powder
Dash of salt
5 large tart apples
1 1/2 cups vegetable oil
1/4 cup sugar
1/2 tsp ground cinnamon

In a bowl, beat egg, milk and oil. Combine flour, sugar, baking powder and salt; stir into the egg mixture until smooth (batter will be thick).

Peel, core and cut apples into 1/2 inch rings. In a deep fryer or skillet, heat oil to 375 degrees. Dip apple rings into batter; fry a few at a time until golden brown. Drain on paper towels.

Combine sugar and cinnamon; sprinkle over hot fritters. Serve warm.


Verdict:
Ohhhh my. These were SO good! They were incredibly easy to make, too. I have a ton of apples so I'm trying to find new ways to use them. I only used two apples because I wasn't sure how much we were going to like them. The outside was so much like a funnel cake, and then there was that burst of apple flavor on the inside. MORE, PLEASE!!

Ugly Pie

This recipe is from the book "Ugly Pie" by Lisa Wheeler. We got this book from the library and the kids loved it... but they REALLY loved the idea that we could make our own real ugly pie!

Ingredients:

Ugly Crust:
2 1/2 cups flour
1 cup lard (or shortening)
1/2 tsp salt
6-8 Tbsp icy cold water

Ugly Filling:
6 cups peeled, sliced Granny Smith apples
1/4 cup molasses
1 tsp lemon juice
5 Tbsp flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup white sugar
3/4 cup brown sugar
3/4 cup red raisins (or Craisins)
1/4 walnuts - chopped fine

For the crust...
First, mix together the flour and salt. Then, using a fork, cut little chunks of that ugly lard into your flour until you get what looks like itty-bitty pea-sized balls. Set aside half this mixture in another bowl for later. Next, sprinkle 1 tablespoon of icy cold water over those pea-sized balls. Gently toss it with a fork. Repeat until your flour mixture forms an ugly ball of dough.

Spread a little bit of flour out on a flat surface (like your kitchen counter). Pat that ball of ugly dough down like you mean business. Then roll it with a rolling pin until it becomes a flat, ugly crust. It doesn't matter if it looks nice and round and pretty. This is Ugly Pie! Place in 9" deep-dish pie plate.

In a large bowl, toss apple slices with lemon juice. Then mix in molasses until apples are completely coated with ugly brown good. Set aside.

In a medium-sized bowl, mix the dry ingredients (flour, cinnamon, nutmeg, white sugar and brown sugar). Add to the ugly apple mixture until everything is nice and moist.

Toss raisins and walnuts into apple mixture. Make sure all ingredients are well coated. Place into pie crust. Your pie should look fairly ugly by now.

Take the crumbly flour mixture you set aside earlier. Sprinkle over the top of the pie. Cover pie with an aluminum foil tent to prevent overbrowning. Bake at 400 degrees for 40 minutes. Remove foil and bake another 20 minutes.

When your pie is done, you will have the most delicious, most beautiful ugly pie you ever saw.







Verdict:
Thumbs up! I loved the idea of making something with the kids that we had just read about. And it really is a delicious pie!

Vanilla-Glazed Apple Cookies

Ingredients:
1/2 cup shortening
1 1/3 cups packed brown sugar
1 egg
1/4 cup milk
2 cups AP flour
1 tsp baking soda
1 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp ground cloves
1 cup chopped walnuts
1 cup finely diced peeled apple
1 cup raisins
Vanilla glaze:
1 1/2 cups confectioners' sugar
1 Tbsp butter, melted
1/2 tsp vanilla extract
1/8 tsp salt
2-4 Tbsp milk

In a large mixing bowl, cream shortening and brown sugar. Beat in egg and milk. Combine the flour, baking soda, nutmeg, cinnamon and cloves; gradually add to the creamed mixture. Stir in walnuts, apples and raisins.

Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until edges begin to brown. Remove to wire racks.

In a small bowl, combine the confectioners' sugar, butter, vanilla, salt and enough milk to achieve drizzling consistency. Drizzle over warm cookies.



Verdict:
Thumbs up! I left out the walnuts because I didn't have them on hand, but these were delicious. My house smelled so good while these were cooking. Made me think of fall coming soon! I definitely recommend these, especially if you need something kind of last minute. Yum!

Caramel Apple Oatmeal Cookies

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup granulated sugar
3/4 cup brown sugar
6 Tbsp unsalted butter, softened
2 tsp vanilla extract
1 egg
3/4 cup finely chopped dried apple slices
3/4 cup caramel bits or 16 small soft caramel candies, chopped


Preheat oven to 350 degrees. Add flour and next 4 ingredients in a bowl, stir well. Observe your 2-year old trying to stir without any help.



Place sugars and butter in a large bowl; beat with a mixer at medium speed until light and fluffy. Add vanilla and egg; beat well. Gradually add flour mixture; beat at low speed until just combined.


 Fold in apple and caramel bits. Drop dough by 2 teaspoonfuls 2 inches apart onto baking sheets lined with parchment paper. Flatten balls slightly with hand. Bake for 9 minutes. Cool on pans and then on wire racks. 




What I did differently from the recipe:
I did use quick-cooking oats because that's all I had on hand. It didn't change any of the timings though. I also didn't use dried apple - no time!

What I'll do differently next time:
Nothing.

Verdict:
Thumbs up! Oh my goodness, these are delicious! They are sweet and gooey and just so yummy! This was such an easy recipe to throw together, so simple to make, and perfect for something last-minute or to feed a bunch of people at a party. I highly recommend it!

Mountain Dew Apple Dumplings

Ingredients:
3 large Granny Smith apples, peeled, cored, and sliced
2 (10 oz) cans crescent rolls
1 cup butter
1 cup brown sugar
1/2 cup sugar
1 tsp vanilla
1 tsp cinnamon (for sprinkling)
1 (12 oz) can of Mountain Dew

Preheat oven to 350 degrees. Butter a 9x13 dish and set it aside. Peel, core and slice apples. Unroll crescent rolls. Take one crescent roll and place one piece of apple at the bottom of the triangle. Roll up, enclosing the sides. Make sure the apple is completely sealed and enclosed. Continue doing this - if your apple slices are small, put a couple in. If your slices are too large you can cut them to size. Place dumplings in your pan. Make your sauce by combining butter, sugars, and vanilla in a saucepan on medium-high heat. Bring to a slight boil. Pour sauce over dumplings. Add Mountain Dew to the sides. Sprinkle cinnamon on top. Bake uncovered for 35 minutes.


What I did differently about this recipe:
I ended up only needing about 1 1/2 apples - I don't know if they were just really large or if my crescent rolls were on the small side because they were the Walmart brand. Also, I only used about half a can of Mountain Dew in the end because it seemed like there was a lot of liquid.

What I'll do differently next time:
Just the same things I did this time.

Verdict:
BIG thumbs up! We have a friend at church that makes apple dumplings all the time and his are the absolute best. So for me to say that I think these outshine his recipe is huge. Although there seemed to be a lot of liquid the dumplings were just crisp enough and not soggy, which is what I was afraid of. Not too sweet so I was able to have three and never heard any complaints from my sensitive teeth. :) I will definitely be making these again in the future!!

Apple Pudding Cake

Ingredients:
1 medium-size Granny Smith apple, peeled, cored, and finely chopped
1 Tbsp lemon juice
1/4 cup firmly packed light brown sugar
1 1/2 cups just-add-water pancake-and-waffle mix
1/2 cup granulated sugar
3/4 tsp ground cinnamon
1/2 cup milk
3 Tbsp butter, melted
1 tsp vanilla extract
2 cups apple juice





Preheat oven to 350. Toss chopped apples with lemon juice in a medium bowl. Add brown sugar, stirring well to coat. Whisk together pancake-and-waffle mix, granulated sugar, and cinnamon in a medium bowl; stir in milk, cutter, and vanilla. Fold apple mixture and any accumulated juices into batter. Spread into a lightly grased 8-inch square pan. Microwave apple juice in a 2-cup glass measuring cup at High 2 to 3 minutes or until boiling. Using a spoon, gently drizzle hot apple juice over batter in pan. Some batter may float once juice is added. Bake at 350 for 30-35 minutes or until a cake layer forms on top and layer springs back when touched. Let cool on a wire rack 25 minutes. Serve with ice cream if desired.




What I did differently from the recipe:
I didn't use a Granny Smith apple. Also, I microwaved 2 cups of apple juice but I only used about 1/4 or 1/3 cup. It just seemed very weird to drizzle two whole cups of juice in this small little pan.

What I'll do differently next time:
Nothing.

Verdict:
Thumbs up!! Very soft and moist. So delicious and so easy! A recipe for when you need something in a hurry. I have a feeling this is one of those that is better the second day as well.

Apple Bundt Cake

From: Summertime Cooking, Vol. 6

Ingredients:
3 cups flour
2 cups sugar
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 1/2 cups vegetable oil
2 tsp vanilla
juice of 1/2 lemon
3 cups peeled, chopped apples
1 1/2 cups broken pecans


Mix flour, sugar, baking soda and salt together, set aside.

In a large mixing bowl, beat eggs until light and airy. Add in oil, vanilla and lemon juice. Gradually add flour mixture until well blended. Fold in apples and pecans.

Pour into greased bundt pan. Bake at 375 for 1 hour or until a cake tester comes out clean. Serve plain or with a glaze.


What I did differently from the recipe:
I used about a 1/4 cup of lemon juice because I didn't have a fresh lemon on hand. I also left out the pecans. It took about 3 small Gala apples to make 3 cups chopped. I also made a lemon glaze (found a recipe at the last second from here) and covered it in powdered sugar because I was scared it wouldn't have enough flavor. You can't go wrong with glaze and sugar.

What I'll do differently next time:
Nothing.

Verdict:
This was an okay cake. There was absolutely nothing wrong with it, but I've had apple cakes in the past that were much better. I'll probably not make this recipe again, but see if I have a different apple cake recipe that I like more than this one.

Apple Coffee Cake

Ingredients:
1/2 cup butter-flavored shortening (I used regular shortening)
1 cup sugar
2 eggs
1 tsp vanilla extract
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup (8 oz) sour cream
1 3/4 to 2 cups chopped peeled tart apples (I used 2 Empire apples)

TOPPING:
3/4 cup packed brown sugar
1 tsp ground cinnamon
2 Tbsp cold butter
1/2 cup chopped walnuts (I omitted these)



In a mixing bowl, cream shortening and sugar. Add eggs and vanilla; mix well. Combine flour, baking powder, baking soda, and salt; add to the creamed mixture alternately with sour cream. Stir in apples.


Transfer to two greased 8-in square baking dishes. For topping, combine brown sugar and cinnamon. Cut in butter until crumbly. Stir in nuts; sprinkle over batter.


Bake at 350 for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool completely. You can cover and freeze this for up to six months. If you do that, simply thaw in the refirgerator.


What I did differently from the recipe:
I noted what I did differently with the ingredients. Other than that, the only thing I changed is that I did this in a 9x13 baking pan.

What I'll do differently next time:
Nothing.

Verdict:
Thumbs UP!!! Oh my gosh. This is by far one of the lightest, fluffiest coffee cakes I have ever had. I have to admit, the first couple of bites I was a bit concerned about the chunks of apple. I'm one of those people that, for example, likes smooth yogurt, not the kind with fruit on the bottom. But after I got used to the texture, sooooooo good. This cake is seriously something I could make every week for breakfast. Perfect for sticking in the freezer and pulling out when you need something in a hurry! It was a super easy recipe too.

Honey and Apple Pork Chops

Note: Instead of using this sauce with ribs, I used pork tenderloin. Therefore my pictures don't match up with the original recipe. I will post both the original recipe and my changes at the bottom.

Ingredients:

3 pounds pork country-style ribs
1/2 cup chopped onion
2 cloves minced garlic
1 Tbsp cooking oil
3/4 cup bottled chili sauce
1/2 cup apple juice or apple cider
1/4 cup honey
2 Tbsp Worcestershire sauce
1/2 tsp dry mustard



For sauce, in a medium saucepan cook onion and garlic in hot oil until tender. Stir in chili sauce, apple juice, honey, Worcestershire sauce and dry mustard. Bring to boiling; reduce heat. Simmer, uncovered for 20 minutes.


Place pork chops and sauce in a sturdy ziploc bag. Marinate, turning pork chops in sauce every so often, 15-20 minutes if possible.


Place pork chops in skillet over medium heat with just a bit of cooking oil. Cook on both sides for 5 minutes each.


Wrap in foil and bake in 325 oven for 20-25 minutes.


What I did differently from the recipe:
I used pork tenderloin instead of ribs. I omitted the chili sauce because I didn't have any on hand. I also fried the pork chops and then baked them, rather than baking them the whole time.

What I'll do differently next time:
Same as above, although if I had chili sauce I might add it. I also might add some baked apples the next time because they would be really good mixed in with this sauce.

Verdict:
Thumbs up! This sauce was sweet and tangy, and so delicious. It was also super easy, which you know I love. Before we were done with our first pork chop, we had almost decided to do this again for dinner the very next night. It was definitely so good!

ORIGINAL RECIPE PRINTABLE VERSION:

Ingredients:

pinch of salt
2 egg yolks
1 egg white
1 Tbsp corn oil
2/3 cup milk
1 lb cooking apples
juice of 1 lemon
sugar, for sprinkling
1/2 cup unsalted butter


Mix the flour and salt in a mixing bowl. Make a well in the center and add the egg yolks, egg white, and oil. Gradually incorporate the flour into the liquid with a wooden spoon. Gradually beat in the milk and continue beating to make a smooth batter. Cover with plastic wrap and let stand for 30 minutes.


Peel and core the apples, then cut them into rings about 1/4-inch thick. Spread them out on a plate and sprinkle with lemon juice and sugar.


Melt the butter in a large skillet over medium heat. Dip the apple rings into the batter, one at a time, then drop them into the skillet. Cook for 2-3 minutes on each side or until golden. Transfer to a serving platter, sprinkle with more sugar, and serve with sour cream if desired.

What I did differently from the recipe:
Halved everything because I only had a few apples. By the way, the lemon juice is just to prevent the apples from turning brown as quickly after you cut them, so if you don't have any just don't freak out if your apples are brown by the time you batter them.

What I'll do differently next time:
Nothing.

Verdict:

Thumbs up. This was an easy recipe and great for breakfast. I browned mine longer than the recipe said because I wanted them to be crunchier. These were good if you like baked apples with a bit of a crust on them. I used only three apples and couldn't even eat them all - I will have leftovers for later! So if there's only one or two of you, this can be a really cheap and easy snack or breakfast.

Apple Bread

Ingredients:

2 Tbsp butter
1/2 cup sugar, 1/4 cup sugar
1 tsp cinnamon
1 apple
a few raisins
1 package active dry yeast
3/4 cup warm water (about 105 degrees)
1 tsp salt
1 cup flour, 1 1/4 cups flour
1 egg
1/4 cup shortening



Melt butter in 9x9 baking pan. Mix 1/2 cup sugar and 1 tsp cinnamon in a small bowl (or use cinnamon sugar if you've already got a mixture). Sprinkle sugar mixture on melted butter in pan. Cut the apple into thin slices. Arrange apple slices in rows on sugar mixture in pan. Sprinkle a few raisins over the apples.


Stir together with spoon in large bowl the yeast and 3/4 cup warm water. Add 1/4 cup sugar, 1 tsp salt and 1 cup flour. If the flour is self-rising you don't need salt. Beat 2 minutes or until the batter drops from spoon in sheets. Add and beat until smooth 1 egg, 1/4 cup shortening, and 1 1/4 cups flour. Drop batter by small spoonfuls over apples and raisins in pan. Cover pan and let rise in warm place until double, 50-60 minutes.


Heat oven to 375. Bake 30-35 minutes or until brown. Immediately remove cake from pan by turning upside down onto serving plate.


What I did differently from the recipe:
I didn't use raisins because I had everything else in the pantry. Raisins would definitely have been good though!

What I'll do differently next time:
Nothing.

Verdict:
Thumbs up!! I ate 1/3 of this by myself and Stephen ate almost the rest. It was so good I immediately made another one with pears! This was such an easy recipe too!

$$:
Free - well, obviously not technically. Mom gave me the apple so it was free and everything else was in my pantry. This shouldn't be an expensive recipe though.

Cut the apple into thin slices. Arrange apple slices in rows on sugar mixture in pan. Sprinkle a few raisins over the apples.

Stir together with spoon in large bowl the yeast and 3/4 cup warm water. Add 1/4 cup sugar, 1 tsp salt and 1 cup flour. If the flour is self-rising you don't need salt. Beat 2 minutes or until the batter drops from spoon in sheets. Add and beat until smooth 1 egg, 1/4 cup shortening, and 1 1/4 cups flour. Drop batter by small spoonfuls over apples and raisins in pan. Cover pan and let rise in warm place until double, 50-60 minutes.

Heat oven to 375. Bake 30-35 minutes or until brown. Immediately remove cake from pan by turning upside down onto serving plate.
