S'mores Cookie Bars

From: All You

Ingredients:
2 cups AP flour
2 cups graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
16 Tbsp (2 sticks) butter, at room temperature
1 1/2 cups packed brown sugar
2 eggs, beaten
2 cups marshmallow topping (like fluff)
2 cups milk-chocolate chips

Preheat oven to 350 F. Line a 9x13 pan with foil. Mist with cooking spray.

In a bowl, combine flour, graham cracker crumbs, baking powder and salt; mix well. In a large bowl, using an electric mixer on medium speed, beat butter and sugar until light, about 2 minutes. Beat in eggs until well combined. Reduce mixer speed to low and slowly beat flour mixture into butter mixture. Divide dough in half. Press half of dough into pan until dough is uniform and flat. Spread with marshmallow topping and sprinkle chocolate chips on top. Scatter remaining dough over in clumps. Don't worry about covering the top; marshmallow and chocolate chips should peek through.

Bake until golden brown, 30-35 minutes. Place plan on wire rack to cool completely. Remove from pan, peel off foil and cut into bars.


Verdict:
Thumbs up! Oh my goooosh I really liked these. I actually liked them the most about 10 hours after they were cooked. Very simple, straight-forward recipe and absolutely yummy! I will be making these again.

Oatmeal S'more Cookies

Ingredients:

1/2 cup butter, softened

1/2 cup shortening

1 cup packed brown sugar

1/2 cup sugar

2 eggs

1 1/2 tsp vanilla extract

3 cups flour

1 tsp baking soda

1/4 tsp salt

1 1/2 cups old-fashioned oats

1 cup semisweet chocolate chips

1 cup mini marshmallows



In a large mixing bowl, cream the butter, shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in the oats, chocolate chips and marshmallows. Drop by teaspoonfuls on greased baking sheets. Bake at 350 for 9-11 minutes or until golden brown.


What I did differently from the recipe:

I ran out of chocolate chips so I used some chocolate chips and some white chocolate chips. Of course that didn't make any difference.

What I'll do differently next time:

Either cut it in half or even a quarter!!!

Verdict:

Thumbs up! Honestly, when they were first made I was not that impressed with them. Within a couple of hours of them coming out of the oven they were already yummier than at first. These were such an easy, straight-forward recipe. Would be great for church functions or parties especially. It makes a TON - I only used about half my dough and it probably made 3 dozen.

Smores Balls

Ingredients:
2 Tbs butter or margarine
2 cups mini-marshmallows
chocolate chips
3 cups Golden Grahams cereal


Over low heat, melt butter with marshmallows, stirring constantly.


When marshmallows have melted down to 1/2 of their original size remove from heat. Add cereal and mix well. Don't let the marshmallows melt completely.


Spray hands with a cooking spray. Divide mixture into 15 parts. Roll each part with hands and form into balls. Place chocolate chips throughout each ball. Set each ball on wax paper and let cool completely.


What I did differently from the recipe:
Nothing, unless you count the fact that my "balls" look completely abnormal.

What I'll do differently next time:
Use a little bit more marshmallows, a little less cereal.

Verdict:
Thumbs up. They are great for snacking on, and probably fun to make with kids. I'm really not sure how in the heck you're supposed to make balls out of these, though. Mine are falling apart. But still good, as long as you're not going for a blue ribbon in the looks department!
