Crock Pot Broccoli Cheese Soup

Ingredients: 
1 (32 ounce) bag frozen chopped broccoli
2 (10 ¾ ounce) cans cheddar cheese soup
2 (12 ounce) cans evaporated milk
1/2 Teaspoon of Garlic Powder
1 Clove of Minced Garlic
Cheddar Cheese
1 Tablespoon of Butter or Margarine
1/2 Teaspoon of Onion Powder
1 teaspoon black pepper
1 Cup of Chopped Onions

Heat up a skillet on medium heat and melt butter – Sautee onions for about 10 minutes. Add garlic and cook for one minute.

Place all ingredients (except Cheddar Cheese) in the Crock Pot. Cover and cook on low 4-5 hours.

Garnish with cheddar cheese. Enjoy!
Verdict:
Thumbs up!! I love broccoli cheese soup and this is SO simple. I'll definitely be making this version again!

Ham, Broccoli and Cheddar Soup

Ingredients:
  • 1 bunch broccoli, cut (or about 4 cups frozen florets)
  • 1 stick butter
  • small onion, diced
  • 1/2 cup flour
  • 6 cups chicken broth
  • 4 cups milk, warmed
  • 2 tsp. worcestershire sauce
  • 1 cups cheddar, shredded
  • 2 cups diced ham
Steam the broccoli until tender.
In a large pot, melt the butter and cook the onion till soft.  Stir in the flour and cook for a minute or two.  Whisk in the chicken broth.  Add the warm milk and Worcestershire sauce.  Heat over medium heat till the soup is hot.
Drain the broccoli and add to the soup.  Stir in the cheese and ham.  Season with salt and pepper.  Serve with extra cheese, if you like.

Verdict:
Thumbs up! Yummy and easy to throw together. I used a 16oz bag of frozen broccoli. This was a great, filling soup. Unfortunately, no picture! But I definitely recommend this one!

Broccoli Cheddar Soup - Panera Style

Ingredients:

  • 2 T. Butter, melted
  • 1 large onion, chopped
  • 1/2 c. butter, melted
  • 1/2 c. all purpose flour
  • 4 c. half and half
  • 4 c. chicken broth
  • 1 lb. fresh broccoli
  • 2 cups, julienned carrots
  • salt and pepper, to taste
  • 1/2 t. nutmeg
  • 16 oz. sharp cheddar cheese, grated
Saute onion in butter.  Set aside.   Whisk butter and flour over medium heat for 3-5 minutes.  Stir constantly and slowly add half and half.  Add chicken stock, still whisking. Simmer 20 minutes.

Add broccoli, carrots and onion.  Cook over low heat until veggies are tender – about 20-25 minutes.  Add salt and pepper.  The soup will have thickened by now.

Carefully transfer soup mixture to blender and puree.  Return soup to pot (or crockpot) over low heat.  Add cheese.  Stir until well blended.  Add nutmeg right before serving.

Verdict:
Thumbs up! Oh man, what a delicious, delectable soup! I do love the soup at Panera and although I'm not sure this is the real recipe, it is DIVINE. Definitely will be making this again in the future!!
