Baked Chicken Honey

Ingredients:
Thighs, drumsticks, wings from 1 3-4 lb. chicken
1/2 cup soy sauce
the juice of 1 lime
1/4 cup honey
1 tablespoon brown sugar
3 tablespoons minced garlic
freshly ground black pepper to taste
salt, optional

Marinate chicken pieces in the rest of the ingredients, except for the salt, for 4 hours or overnight, turning occasionally to redistribute. Drain chicken from marinade and transfer to greased baking sheet. Bake at 350 degrees for 30 minutes, turning once, or just until cooked through and juices run clear. While chicken is baking, cook marinade in a small saucepan, until thickened. Adjust seasoning with salt and pepper if necessary. When chicken is done, dip each piece into the cooked marinade and return to baking sheet. Broil 2 minutes or until just golden. Serve hot with the sauce over steamed rice.
 
 

Verdict:
Thumbs up! I love trying new chicken recipes. I love recipes that involve ingredients I already have on hand, so I can decide to make them last minute! This is a yummy, quick-cooking recipe that I'll definitely make again in the future.

Sweet and Tangy Chicken

From: Syrup and Biscuits

Ingredients:
8 chicken thighs 
1 package dry french onion soup mix
1 (8 oz bottle) Russian dressing
1 small jar of apricot preserves or about a cupful

Mix all ingredients, except chicken, in a bowl.
Place chicken pieces in a baking pan. Sprinkle with pepper. No extra salt is needed.
Pour sauce over chicken and make sure it’s coated well.
Roast uncovered at 400 degrees for 1 hour to 1 hour and 15 minutes until chicken is done. Baste several times during cooking.


Verdict:
Thumbs up. This wasn't my favorite recipe for chicken ever, but it was incredibly simple, cheap, and my family liked it. You can't go wrong with a recipe with so few ingredients and such little leg work!! I'll probably make this again in the future, maybe not using an entire package of the french onion mix because I think my husband would prefer it without so much onion flavor.

Caramelized Baked Chicken

Ingredients:
2 1/2 lbs chicken legs
1 2/3 tablespoons olive oil (to help it stop sticking to the pan)
1/2 cup soy sauce
1 2/3 tablespoons ketchup
3/4 cup honey
2 -3 garlic cloves, minced
salt and pepper

Preheat oven to 350 degrees. Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken. Bake in preheated oven for one hour, or until sauce is caramelized. Could also use wings or pork ribs.


Verdict:
Thumbs up! A sweet, yummy sauce for the chicken. Everyone in my family loved this recipe so I'll definitely be making it again in the future. I did use tenderloins and they turned out perfect. My husband said the sauce made the tenders very moist, which he liked a lot. I would have liked them to caramelize more, but I think that's just me nit-picking. I definitely recommend this one.

Barbecued Chicken Wings Bahama

Ingredients:
2 lbs chicken wings
2/3 cup ketchup
2 Tbsp lime juice
1 Tbsp brown sugar
1/2 tsp allspice
1/4 tsp red pepper
1/8 tsp garlic powder

Cut off wing tips and discard; cut each wing in half at joint. Place wings on broiler rack. Bake in 400 degree oven 40 minutes, turning once. Meanwhile, combine ketchup, lime juice, brown sugar, allspice, red pepper and garlic powder; brush on wings. Broil 2-3 minutes. Turn wings and brush with sauce. Broil an additional 2-3 minutes.




Verdict:
Not too bad. I used chicken breasts, cut them into tenders, and marinated them in the sauce in a ziploc bag for a couple of hours before dinner. Then I cooked them in a 350 degree oven for 25 minutes. They were perfectly done. I felt like these were a little too "spice-y" for me. Not spicy, spice-y. I could really taste the allspice. It wasn't bad, but it wasn't my favorite chicken recipe ever. With that being said, the kids totally devoured it, so maybe I should do this for a weekday lunch every so often. P.S. Sorry the pictures look kind of gross.

Pineapple Chicken Tenders

Ingredients:
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup soy sauce
2 lbs chicken breast tenderloins

In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.

Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.

Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.

Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear.


Verdict:
Thumbs up! I actually just cooked it in the oven at 325 degrees for about 15 minutes. I do think this would be a great grilling recipe. I think this was a great flavor. I actually halved the ingredients because my husband doesn't love sweet chicken marinades. So if you want to tone the flavor down some you could definitely do that. If you do like sweet marinades I wouldn't change it a bit.

Baked Chicken Parmesan

Ingredients:
2 Tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
6 boneless, skinless chicken breasts
2 cups marinara sauce
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 5-oz package garlic croutons


Coat the bottom of a 13x9 pan with the olive oil and garlic and red pepper flakes (optional). Put chicken breasts on top. Put marinara sauce on top. Sprinkle basil on top, then 4 oz mozzarella cheese, and sprinkle 2 oz parmesan on top. Sprinkle 5 oz croutons on top. Add 4 oz mozzarella cheese and 2 oz parmesan. Bake at 350 for 35 minutes or until chicken is done.


What I did differently from the recipe:
Nothing.

What I'll do differently next time:
I would cover it with foil the next time. After 40 minutes, my chicken still wasn't done but my croutons were burning. I covered it with foil and continued cooking it and they were fine, but I wish I had known that before this became a "blackened" dish.

Verdict:
Thumbs up. Stephen and I both agreed this was not the best chicken parmesan recipe EVER, but it certainly was easy to make, and I only had to buy the croutons, so it was cheap to make as well. I'll make it again in the future, but I will definitely be covering it for the first 30 minutes or so!

Baked Teriyaki Chicken

Ingredients:
1 tbsp cornstarch
1 tbsp cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 tsp ground ginger
1/4 tsp ground black pepper
12 skinless chicken thighs

In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.

Preheat oven to 425 degrees F (220 degrees C). Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.
 


What I did differently from the recipe:
Used chicken breasts instead of thighs.

What I'll do differently next time:
Nothing.

Verdict:
Thumbs up!! I was worried about trying this recipe because of the amount of soy sauce. Hubby doesn't like soy sauce usually. But we ALL loved this recipe and there wasn't even a whole chicken breast left over! This will definitely be made again here in the future and I highly recommend it to you!
