Brown Sugar Meatloaf

Ingredients:
Topping:
1/2 C packed brown sugar
1/2 C ketchup
 
Meatloaf Mix Ingredients:
3 lbs lean ground beef
1/2 C milk
2 eggs
1 1/4 tsp salt
1/4 tsp ground black pepper
1/2 bags onion or 1 onion chopped
1/4 tsp ground ginger
1/2 C oatmeal
 
Preheat oven to 350°. Lightly grease a 5x9 inch loaf pan. Combine meatloaf mix ingredients. Form into loaf and top with ketchup mix (mixed ketchup and brown sugar). Bake in preheated oven for 1 hour or until juices are clear.
 
 

Verdict:
I wasn't a big fan of this. I thought it was very sweet, and my husband and 3-year old wouldn't even touch it. This picture, though, shows exactly how much my 20-month old ate in one sitting. So obviously this might be a good match for your family! As for myself, I'll stick with my mom's meatloaf.

Meatloaf





From: My Mom

Ingredients:
1 1/2 lb ground beef (not cooked)
1 cup oats
1 cup ketchup
1/4 cup onion
1 egg
salt and pepper

Mix all ingredients in a large bowl. Put in loaf pan. Bake at 350 degrees for about an hour.


What I did differently from this recipe:
It is blasphemy to think I would change this recipe.

Verdict:
Thumbs up!! It wasn't 1000% like my mom's but I'm sure it never will be!! It was close enough that this is going to become a staple food around here! Thank you Mom!
