Flaky Ham and Turkey Sandwich Slices

 From: Pillsbury Annual Cookbook 2007


Ingredients:

  • 1 box (15 oz) Pillsbury refrigerated pie crusts, softened as directed on box
  • 2 tsp yellow mustard
  • 1/2 lb sliced cooked turkey
  • 1 cup shredded Cheddar cheese
  • 2 small plum tomatoes, thinly sliced
  • 1/2 lb sliced cooked ham

Heat oven to 425 degrees. Remove pie crusts from pouches; place crusts flat on work surface (after they've been softened). Brush each crust with 1 tsp mustard to within 1/2 inch of edge.

Layer turkey, cheese, tomato slices and ham in 4 1/2-inch-wide strip down center of each crust to within 1 inch of top and bottom of edges. Fold top and bottom edges up onto filling. Bring both sides up over filling, meeting in center; press crust edges together forming 1/2-inch-high seam to seal. Place on ungreased cookie sheet. Cut 3 or 4 slits in the top crust of each to allow steam to escape.

Bake 20-25 minutes or until golden brown. Cool 5 minutes. Cut each roll into 8 slices; serve warm.



Verdict:
Thumbs up! I love a hot sandwich, so this had a great flavor combo and hit the spot.

What I did differently or would do differently the next time:
Honestly, I would love this with a croissant crust instead if I did this again. Also, reading is vital. I did NOT soften my pie crusts and the first one I cooked broke all to pieces because of this! Hah! Definitely let the pie crust soften so it is more pliable when you are layering.

Also, for some reason, my brain could not comprehend these directions. Let me give it to you in layman's terms: lay out your pie crust. Slather it with a little mustard. In the middle, lay down some turkey, then cheese on top, then tomatoes on top, then ham on top. Then fold the top and bottom inwards, and then pull over the left and right sides into the middle like a burrito. Boom.

I also love that you can easily vary the ingredients. The next day, I had one pie crust left, so I made another one with avocado mayo, and I added onions. Chefs kiss!

Brown Sugar Ham Steak

Ingredients:

1 8-oz fully cooked ham steak
5 Tbsp butter, cubed
5 Tbsp brown sugar

In a large skillet over medium heat, brown steak on both sides. Remove ham.

In the same skillet, melt the butter; stir in brown sugar. Return ham to skillet, cook until heated through, turning often.



Verdict:

Thumbs up! This glaze was very juicy and not too sweet. It added a great flavor to the ham. I actually made a little extra glaze and poured it over the top just as I served it. Really easy and fast! I'll be making this again!

Old-Fashioned Skillet Country Ham Steak

Ingredients:

1 lb ham slice
2 Tbsp butter
1/2 cup water
2 Tbsp dijon mustard
1/4 cup brown sugar
1 tsp paprika

Melt butter in skillet and add ham, cooking until brown on both sides approximately 3-4 minutes on each side. Remove ham steak from pan and keep warm.

Add remaining ingredients (water, dijon mustard, brown sugar and paprika) to the pan, and cook until sugar is dissolved, about five minutes.

Place ham steak back in the skillet and cook approximately five more minutes with caramelized glaze.




Verdict:
Thumbs up! It was a little dry, but not bad. The flavor was really good, particularly if you do like classic country ham. I'm a big fan of easy recipes and this is about as simple as it gets.

Cheesy Ham and Mushroom Pasta

Ingredients:
12 oz. rotini
3 Tbsp olive oil
1/4 cup chopped onion
1/2 cup sliced white mushrooms
1/2 cup chopped ham
1 cup shredded cheddar cheese
1/2 cup packed chopped fresh basil

Bring a large pot of salted water to a boil over high heat. Add pasta and cook until al dente, about 7 minutes. Drain, reserving 1/2 cup cooking liquid.

Warm oil in a large, deep skillet over medium heat. Add onion, sprinkle lightly with salt and pepper and saute until translucent. Stir in mushrooms and cook, stirring occasionally, until they give up their liquid, about 5 minutes. Mix in ham and cook until warmed through, stirring once or twice, 1-2 minutes. Add ham mixture, cheddar cheese and basil to pot with pasta. Toss to combine, moistening with cooking liquid if necessary.


Verdict:
Thumbs up! This is such a simple recipe, but it's so good. You can't go wrong with these ingredients, in my opinion. Perfect for lunch or a quick dinner!

Ham and Egg Wrap

Ingredients:
1 whole egg
3 egg whites
6 slices of ham (I used Walmart brand smoked honey ham, 97% fat free)
2 tortillas (I used La Banderita brand, fat free)
1/4 cup shredded cheddar cheese (I used Harris Teeter brand, sharp cheddar)

Beat whole egg, egg whites and ham until well blended. Heat nonstick skillet sprayed with cooking spray on medium-high heat. Add egg mixture; cook 3 min. or until set, stirring occasionally. 

Spoon egg mixture down centers of tortillas; top with cheese. Fold in opposite sides of each tortilla, then roll up burrito-style. 


Verdict:
Thumbs up! I know this is a really simple, common-sense recipe but it was just what I needed today. I'll definitely be making these more and freezing them when I get a chance.

Bean-and-Ham Soup

Ingredients:
3 cans northern beans, divided
1 can chicken broth, divided
2 Tbsp butter
1 small onion, diced
8 oz cooked ham, cubed
1/4 tsp pepper

Rinse and drain beans. Process one-third can of beans and half of chicken broth in a food processor until smooth. Set aside.

Melt butter in a Dutch oven over medium heat. Add onion, and saute 5 minutes or until onion is tender. Add ham, and saute 10 minutes or until lightly browned, stirring constantly.

Add bean puree, remaining beans, and remaining chicken broth. Bring to a boil; reduce heat, and simmer 10 minutes. Stir in pepper. Serve immediately.


Verdict:
Thumbs up! Very simple, filling soup. Great flavors - I love ham and bean together. Great consistency with the blended beans. Hunter (my 2-year old) was gobbling this up! I would definitely recommend this soup for the ease with which you can make it and the yummy flavor!

Ham 'N' Swiss Soup

Ingredients:
4 1/2 tsp butter
4 1/2 tsp AP flour
1 can chicken broth
1 cup chopped broccoli
2 Tbsp chopped onion
1 cup cubed fully cooked ham
1/2 cup whipping cream
1/8 tsp dried thyme
3/4 cup shredded Swiss cheese

In a saucepan, melt butter; whisk in flour until smooth. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the broccoli and onion; cook and stir until tender-crisp. Add the ham, cream and thyme; heat through. Stir in the cheese until melted.

Verdict:
Thumbs up! Oh my goodness, this soup was so delicious and melted in our mouths! I will definitely be making this one again. My only note - I recommend doubling this recipe. It only gave us three servings in the end and I would have liked more of it!

Honey Baked Ham (Copycat recipe)

Ingredients:
3 1/2- lbs ham (spiral cut smoked, fully cooked)
1/2 - cup pear or apple juice
1/2 - cup orange juice
1/2 - cup brown sugar (firmly packed)
1/2 - cup honey
hand held butane torch

Preheat oven to 375°F. Place the ham, cut end down, in a large baking pan.  Mix the pear or apple juice with the orange juice in a bowl and mix.  Pour the juice mixture over the ham and bake for 15 minutes basting frequently with juices. Remove from oven.  Mix brown sugar and honey together in a small bowl.  Brush mixture over ham and bake for another hour or until internal temperature reads 140°F.  Using a butane torch carefully caramelize the glaze to the crust using small strokes.



Verdict:
Thumbs up! I am never buying deli ham again. Literally. I can't believe I have waited so long to cook a ham. I'm not sure why I was so afraid. About a month ago I caught a ham on sale for $0.99/lb and I scooped one up (it was just over 8 lbs). I figured I may as well take the plunge and try to cook it. Found this recipe and made this for dinner the night Stephen just returned from his last deployment. It doesn't get any easier than this. I threw away the glaze packet that came with the ham. I did everything just as this recipe specified (I used apple juice and orange juice) but my ham did take about 3 1/2 hours to cook. When it was done, we used the butane torch to caramelize the outside (see first picture) but all it did was harden the spot that we torched. I ended up matting on extra brown sugar with some juices and then torching it lightly. This added the "Honeybaked Ham" skin that we love so much! If you're scared of cooking a ham, like I was, I strongly encourage you to try this recipe. It was incredibly simple and made a ton of ham. I'll never be afraid again!

Ham, Broccoli and Cheddar Soup

Ingredients:
  • 1 bunch broccoli, cut (or about 4 cups frozen florets)
  • 1 stick butter
  • small onion, diced
  • 1/2 cup flour
  • 6 cups chicken broth
  • 4 cups milk, warmed
  • 2 tsp. worcestershire sauce
  • 1 cups cheddar, shredded
  • 2 cups diced ham
Steam the broccoli until tender.
In a large pot, melt the butter and cook the onion till soft.  Stir in the flour and cook for a minute or two.  Whisk in the chicken broth.  Add the warm milk and Worcestershire sauce.  Heat over medium heat till the soup is hot.
Drain the broccoli and add to the soup.  Stir in the cheese and ham.  Season with salt and pepper.  Serve with extra cheese, if you like.

Verdict:
Thumbs up! Yummy and easy to throw together. I used a 16oz bag of frozen broccoli. This was a great, filling soup. Unfortunately, no picture! But I definitely recommend this one!

Ham and Cheese Pie

From: my mom (technically my sister emailed me the recipe, but it's mom's recipe)

Warning: This is one of those recipes that doesn't really have "technical" measurements. I made it just fine the first time I did it and I'm sure yours will be delicious too!

Ingredients:

pie crust
ham -- however much you think looks good
1 cup cheddar cheese
1/4 cup milk
1 egg salt and pepper to taste
1/4 cup onion


In a bowl, mix all ingredients. pour into pie crust. Bake at 350 until done.


What I did differently from the recipe:
Nothing.

What I'll do differently next time:
Nothing.

Verdict:
Thumbs up!!! This is one of my favorite recipes of mom's and I'm so glad I finally made it! I used the Betty Crocker pie crust mix in a box because I had it in my pantry. Jenn uses frozen pie crust and makes two at a time. I don't know what mom uses but you could also make your own pie crust. As for the ham, I probably used between 1 1/2 - 2 cups of diced ham. Mine baked around 40 minutes before it was done.
